Espresso, Chocolate & Stout Mousse

Stout season is here! To celebrate, we wanted to feature some fun recipes using our Grüvi non alcoholic stout- and we’re starting with this amazing mousse!
Ripe avocados create a super creamy texture, while freshly brewed espresso compliments the dry stout and chocolate flavors. While this mousse is still tasty on it’s own- we recommend some fun toppings like whipped cream, cherries, pretzels or freshly toasted marshmallows.
Whip up this decadent dessert the next time you’re craving something sweet and have a stout on hand!
Chocolate Stout Mousse
This recipe makes about 6 servings
Ingredients
- 4 ripe avocados, pits removed
- 1/4 cup +2 tbsp. cocoa powder
- 1/2 cup + 3 1/2 tbsp. of maple syrup
- 3 tsp. of vanilla extract
- 1 tsp. of salt
- 1 cup of chopped chocolate or chocolate chips
- 1/2 tbsp. coconut butter
- 1/4 cup + 3 tbsp. of Grüvi Stout
- 1 shot of espresso*
- 1 tsp. of instant coffee
Whipped Cream
- 2 cups of cold heavy whipping cream
- 2 teaspoons of vanilla extract
- 3 tablespoons of maple syrup
*If you don’t have an espresso maker at home, just head to your local coffee shop & grab a shot instead!
Instructions
- In a food processor or blender add the avocado, cocoa powder, maple syrup, vanilla and sea salt and blend until creamy. Occasionally scrape down the sides and to fully incorporate.
- In a small saucepan combine chocolate, coconut butter, stout, espresso, and instant coffee and cook over medium low heat stirring to prevent the chocolate from burning. Set aside and let cool slightly. Then add to the food processor and mix well. set aside
- To make the whipped cream add the heavy cream, vanilla, and maple syrup to a stand mixer and mix until fluffy and forms a peak. Preserve a small amount of whipped cream for the tops of the mousse cups.
- Fold the avocado mixture into the whipped cream mixture until fully incorporated.
- Add the mousse into cups or ramekins and top with the remaining whipped cream.
- Top with your favorite ingredients (these are personally my favorite cherries- they’re a little spendy but oh so worth it!)
