To create the blueberry puree, add sugar, water, blueberry and grated ginger to a saucepan.
Bring to a simmer over medium-low heat and cook for about 10 minutes.
Let cool and transfer mixture to a blender or food processor. Blend until the mixture becomes a smooth puree.
Add ice to the glass, pour in 2 ounces of blueberry puree and top with Grüvi Prosecco.
