Beer-infused Queso Dip

Grüvi Pale Ale Queso Dip

Just like your childhood favorite, this ultra-creamy queso dip is so good, you'll want to eat it straight up (but we recommend pairing it with chips!)

Ingredients:

  • ¼ cup of diced red onion
  • ¼ cup of chopped red pepper
  • 1 jalapeño seeds removed-diced
  • 2 tablespoons of olive oil
  • ½ cup of diced canned tomatoes-no salt- rinsed
  • 1 ½ tablespoon of green chilies
  • 1 ½ teaspoon of minced garlic
  • 3 tablespoons of butter
  • 4 tablespoons of all-purpose flour
  • ¾ cup + 3 tablespoons of heavy cream
  • ½ cup + 3 tablespoons of Gruvi Pale Ale
  • 6oz of cream cheese
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • ¼ teaspoon of cumin
  • ⅛ teaspoon of chili powder
  • 1 cup of shredded mozzarella
  • 1 cup of shredded sharp cheddar
  • Salt and pepper to taste

Instructions:

  1. Over medium heat in medium/large skillet add olive oil, red onion, jalapeño, red pepper.
  2. Sauté until onions are translucent about 4-5 minutes.
  3. Add in canned tomatoes, green chilies, and garlic. Cook until garlic is fragrant — about 1 minute.
  4. Remove from heat and set aside.
  5. In a separate skillet over medium-low heat, add butter.
  6. Once butter is melted whisk in flour.
  7. Add in Heavy cream and pale ale.
  8. Allow the mixture to thicken while you continue to whisk it. Whisk in spices.
  9. Add in cream cheese and cheeses.
  10. Reduce heat and while continuing to whisk occasionally to prevent the mixture from sticking to the bottom of the pan.
  11. Once the cream cheese and the cheeses are fully melted mix in the veggies.
  12. Let the veggies heat up for about 5 minutes.
  13. Serve hot with chips and enjoy!
